So I’ve been Keto for almost 12 months now, and along the way I’ve developed some seriously favourite recipes, so I thought I’d start sharing them with you.
In my old life from the age of about 14 (thank God I didn’t know what Nutella was before then!!!) I was seriously ADDICTED to Nutella and everything else that contained sugar!!
There are bucket loads of different recipes online for Chocolate Hazelnut Spread, I’ve tried several and tweaked them as I went along. One of my close friends is always paying me out about the way I just casually never really follow a recipe while she measures everything precisely. What can I say, I’m too lazy to follow instructions lol. I think when it comes down to recipes with nuts you kind of have to go by sight and just check the consistency to suit yourself as the amount of oils in the nuts varies from brand to brand.
I purchase my Hazelnuts from Costco in a 525g bag, which works out to be 4 cups, which is what I have based my recipe on.
Personal preference…I like to use the Liquid coconut oil, then when I bottle it up and put the spread in the fridge it doesn’t go as hard as it would with pure coconut oil. And I love the glugginess and scent of the vanilla bean paste, you could easily use vanilla extract but I like to be different lol.
One thing to remember is to make sure you use POWDERED SWEETENER. If you don’t you will have yourself a bit of a crunchy texture using normal granulated sweetener. (I’ve totally been caught out several times with this issue, I now always have some milled up in the pantry)
